If your grocery store is looking bare in the energy bar section and you need some new ideas on healthy snacks to curb your appetite, try my “Best Ever Energy Bar Recipe”. This has been my favorite for the last 10 years for bike rides and as a healthy snack. If you are missing any of the ingredients below, try substituting with what you have. What I love about energy bar recipes is you can use a little creativity to make them to your liking.

 

This recipe uses a lot of ‘normal’ ingredients you will probably find in your cabinet. You can modify the ingredients if you need to.

Mix the dry and wet ingredients separately.

 

Mix the dry ingredients with the wet and then pour into a 9x13inch pan that is lined with plastic wrap. Make sure to spray or wipe oil on the plastic wrap. This will help you get the sticky bars out of the pan. You will then put the bars in the fridge for 30+ minutes so they can stiffen.

After you remove the bars from the fridge, cut into desired size pieces and place on a baking sheet that is lined with greased foil or with parchment paper. Bake for 20-22 minutes at 300 degrees.

 

When your bars are done baking. Let them cool to room temperature and then wrap individually or place in a storage container.

 

Best Ever Energy Bar Recipe

Dry:
1c flour
2 1/2 c oats
1/2 tsp baking powder
1/2 tsp salt
1/2 c coconut
1 c chopped nuts
1/2 c dried fruit
1/2 c chocolate chips

 

Wet:
2/3 c crunchy peanut butter
1/2 c milk
2 eggs
1/2 c honey
1/2 c brown sugar

 

Mix separately:

Mix wet ingredients with dry. Line plastic wrap on 9×13 in baking pan. Spray with baking oil. Put the mixture into the pan and spread evenly, cool in the fridge for 30 minutes or so to let it stiffen. Take out of the fridge and cut into desired sized bars. Place bars on the cookie sheet (lined with foil and greased – or with parchment paper) with space in-between. Bake at 300 degrees for 20-22 minutes. Cool and then wrap bars in foil/plastic, or put in mini snack size bags to carry on rides.
